Canjiquinha is a Brazilian delicacy typical of the state of Minas Gerais. The corn kernels are broken but not so finely that they pass through a sieve. The kernels are then cooked with pork (usually ribs) and homemade seasonings. Canjiquinha is traditionally served in a deep dish and accompanied by sautéed chopped kale and black pepper.
